There isn’t a lot Mohamed does not know about Fes, from the historical monuments to hidden gems. His responsibility, that he enjoys, is to ensure that each of our guests' needs and requirements are met and exceeded.
He takes great pride and pleasure in finding the most suitable choices of day- trips; planning personalised tours; recommending a restaurant; or helping to solve your travel issues. He always has the perfect suggestion to enhance your experience when staying at Riad Alassala Fes.
Samir always enjoys being there for you. Looking after your safety during the night and serving you our delectable rich and varied breakfast with big smile in the morning! He will always ask you how you slept and if you need anything that he can offer you. If you love our plants, then you should know that he is the one who looks after them.
Mohamed, our Riad Manager, together with Zineb in the front of house and Samir as night audit, enjoy taking a personal care of our guests from the first introduction to every stage of your guest experience, through reservations, a warm welcome on arrival, looking after you while you are at your “new home away from home” and saying goodbye to our new found friends.
OUR CHEFS
The long-established tradition of Fassi Moroccan Breakfast has been wonderfully preserved at Riad Alassala Fes. The Brioche, the Mlawi with khlie, Baghrir and cakes have been perfected by our dedicated and talented Chef Meryem. Using only natural and fresh ingredients, she enjoys producing the freshest pastries and fruit salads for our guests to enjoy.
Our Chef Souad is a descendent of pure rooted Fassi family. She didn’t attend any Hotel or restaurant school, she learned how to cook from her mother and grandmother and she sharpened her skills through the time inspired by the variety of fresh ingredients available in the local souks.
Souad doesn’t see herself as a chef, she always considers herself as your host who is proud to offer her guests an authentic Moroccan cuisine with recipes passed down from generation to generation for centuries using only authentic fresh locally sourced ingredients to form what is known as the art of Fes Gastronomy.
Both Meryem and Souad are committed to deliver an experience that celebrates authentic Moroccan flavours made with the finest ingredients.
